Easy Wholemeal Bread

This bread recipe really is simple, and delicious! I like to make rolls and then freeze them so you can get them out whenever you need them. These ingredients can be stored in your cupboards for quite some time so you never need to be stuck without bread!

Ingredients:

450g Strong Brown Bread Flour - any type you like. Supermarket own brands are ideal.

2Tbsp Sunflower Oil

225ml Warm Water (from the tap is fine)

2Tbsp Runny Honey

1 1/4 Tsp Salt

1 1/4 Tsp Easy Bake Yeast (or one of those 7g Sachets)

1 Greased Loaf tin or a greased baking tray (Or lined with baking paper)

Method:

1. Stir all the dry ingredients in together:

2. Add the water, honey and oil until a soft dough is formed. Make sure you add the water slowly so you can ensure a good consistency. If your dough isn’t forming together, add a little bit more water until it is.

3. Knead it. Ok so I have a nifty gadget that makes this even easier:

Dough beater attachments for my electric whisk. Takes about 3 minutes to knead it to a good consistency. If you do not have such a thing either get one, or knead it by hand for about 10 minutes.

4. Now if you are making a loaf, put the dough in the loaf tin. If you are making rolls then tear into 8 balls (I had to spread these over two trays). Get some cling film and spray or spread a teeny bit of olive oil over it. This is easier with that 0Cal oil spray. Then place over the loaf or rolls like so:

The traditional method is to place a damp tea towel over it, but this way seems a little cleaner. It’s to keep dirt off and make it a warm hot house while the dough rises.

5. Leave the dough to prove somewhere! Your bread wants a warm space so it can grow nicely for about an hour. I put mine in an airing cupboard, but if you don’t have one you could put your oven on, and place the dough on a chair next to the closed oven door. When your dough has about doubled in size, it’s ready to go in the oven:

Have your oven at 220C, and bake it from 25-30 minutes.

Dependent on your oven, you may need to adjust the timings and temp slightly, but you’ll know after you’ve done this once. When it’s done it should sound hollow when you knock on the bottom of the loaf or roll.

Lean Bean Chilli Machine

I love this tasty low fat high protein chilli. The picture here is served with Bulgur and Quinoa but I’ve also put it in wholemeal wraps and served it with sour cream and salsa :D

You will Need:

1 Can of Sweetcorn (drained)

1 Packet of Turkey Mince

1 Tin of Chopped Tomatoes

1/2 Sliced Onion

2 Cloves Garlic shopped or two squirts garlic puree

1 Can Kidney Beans

1 Can of Black Beans or any other tinned type you like, I used Cannelini

1 Tbsp Tomato Puree

1 Packet of Chilli seasoning, like Schwartz

Method:

1. Brown the turkey and drain any water

2. Put everything in the slow cooker, stir well and cook on low for 4 hours or high for 2 hours.
